What is unique about your restaurant?
I am more successful on my own than with a group. I am not good in groups in the financial world. So I started getting back to my Russian roots and making bread. Ask me how much money I made making bread….none I was making none. I had to perfect my craft. So I studied making French pastries. Lets just say most bakers out there are going to brag about the pastries they make. I became obsessed with getting it right. So I perfected it. It is almost like a business card. You put what you want to be known for. I chose pastries. I really get into the zone and bake away. It is all very subjective. Temperature of environment of water. It is like engineering. I don’t do it for the food. I do it for the money and recognition.

All I care about right now is opening up for breakfast. The milestone is success at breakfast.
What brought you to Jacksonville?
The job that brought me to Jacksonville was at the Duetchavik/ Apex. I thought I was doing pretty well. I messed up working at a finance company and I sent an email to the wrong client. I was let go. I had worked in a restaurant in my youth so I thought this is the perfect industry to get into at the moment. So I ended up being a manager at a Japanese restaurant in middle school and the owner was using it to cover up a drug front for Woodstock. Keep in mind I was not even 18 yet and that summer I opened and closed the Japanese restaurant. This was in Milwaukee Wisconsin where I am from.
