Maple Street Biscuit Company Interview:

What’s your specialty dish? How did you come up with the idea to create it.

I would say the “The Five and Dime” is our specialty; it is everything our company stands for in food. It is an all natural fried chicken on a flakey biscuit with pecan smoked bacon cheddar cheese, sausage gravy that has a little kick, and a fried egg. I don’t know anyone who doesn’t love this biscuit. Our principal here that we follow for every dish is “southern comfort food with a modern twist.” It was a goal for our customers to feel this way and we’ve done a good job of achieving it.

 

What are some popular items on the menu?

We have a ton of items on our menu that our customers love. Some of our popular items are the “squawking goat” and the “bam yoyo” which is our version of chicken and waffles. The “hash brown cake” is the most popular side item.

 

When did you start your business and how has it become so successful? What are your other locations if any?

We opened in 2012 at the San Marco location. Since this is the original location, it stays true to its values and standards as it did the first day it opened. We always have these four steps in the back of our minds at all times. We as a company give everyone gracious service, comfort, a clean store, and lastly with all of those in play; it allows us to have a sustainable business.

We also serve Julington Creek, Jacksonville Beach, Gainesville, St. Augustine, Fleming Island, two locations in Tallahassee, and Chattanooga, Tennessee.

 

Why did you choose this industry?

I chose this life because I always had a calling to it. I started at Chick-fil-a and the founder of Maple Street, Scott Moore, came in one day and struck up a conversation with me. He was a genuine guy who gave me his business card and the rest is history. Now I’m here and plan to make this my career forever. I am now a community leader which allows me to get to know my employees and customers better. I love working for Maple Street Biscuit Company because of their principals, great food, and the founder’s support of every location.

 

What are advantages to having your location in San Marco?

We are in a great location where tons of businesses and people can come in and enjoy breakfast and lunch with us. With us being the original store, it attracts people who want to come in and experience the atmosphere of where it all started.

How involved are you in the community, do you host any events?

We cater to a lot of people, (mostly doctor’s offices) but would love to branch out more and help cater events in the area.

You can ask to hold events in the store during or after hours if you want to make it more private. We also hang signs up of local events and business to help them out. The goal is to get to know the community.
