Mobile Munchies: A Flying Sausage

The simple sausage has evolved into a true culinary art form. From the high-end to the exotic, sausage makers around the country and the world are experimenting with new and exciting ways to deliver us meat in tube form. A Flying Sausage food truck is no different. They’re bringing imaginative variations on the typical sausage format to the streets of Jacksonville, pairing unique tubular creations with atypical serving options. Be it their lamb sausage gyro on a homemade rosemary flatbread to the choice I went with, the chicken & waffles, A Flying Sausage seems set on wowing the masses with new sausages that come from either the mind of a mad man or an absolute genius.

The day I ventured over to check them out, they were offering up either BBQ sausage sliders, chorizo tacos, a smoked sausage, a hot Italian sausage, and their iconic chicken & waffles. Having had their lamb sausage gyros quite a while back, I knew I’d be in for a treat if I gave myself over to their brilliance. Opting for the chicken & waffles, which features 2 fried buttermilk chicken sausages served on maple waffles topped with collard greens and a sweet chili sauce, I then chose a side of their home fries to compliment the dish. I was tempted to double down on the collard greens as they are a personal favorite of mine being raised very Southern, but the home fries just seemed to be calling my name. The buttermilk chicken sausage is a fried nugget of awesome, with a crispy crust on the casing and a succulent interior, while the maple waffles provide the perfect delivery system leaving nothing more for your heart to desire. Just when you think that’s all you need, they toss on some of the best collards I’ve ever had the pleasure of tasting, and drizzle the whole thing with a sweet chili sauce that opens the flavor profile to a new level. The home fries are nothing extraordinary, but they’re fried to a beautiful golden crisp and are the perfect addition to the meal.

So if you’re a fan of meat in tube form (and who isn’t?), make sure you give A Flying Sausage a try next time you see them out and about. They’ll make you believe.
